HOSP 10504 - Basic Food Preparation 4 Credit(s) : 2 Lecture Hour(s) , 6 Laboratory Hour(s) Co/Prerequisite(s): HOSP 10202 Principles, techniques and theories of food production including the introduction, use, and selection of equipment. A variety of cooking methods and techniques using commercial food production tools and equipment including basic knife skills. Sanitation and safety principles are reinforced.
